Itinerary 


Day 1- Arrival/Check In/Dinner 


Independent arrival to Florence. Meet with your driver and transfer to your accommodation, provided at a boutique hotel/farmhouse/agritourism ( like Villa Lecchi,Tenuta Mensanello or similar)   in the picturesque villages of Colle Val d'Elsa or San Gimignano. You will be surrounded by the world famous Chianti Hills.
Check In, welcome drink, dinner out. Overnight.  


Day 2- Discover the Brunello di Montalcino, Wine tasting and Siena. 


After breakfast, meet with driver/guide and depart towards the Val d'orcia, A Unesco World Heritage site located in the southern part of the Province of Siena. After a beautiful 1 hour drive, you will reach an awarded farm for the production of the noble of the wines. Walk into the vineyards and visit the cellars followed by a wine tasting and local lunch. In the afternoon stop in Siena (1.5 hour free visit of the city);  a gem of the Italian Renaissance, with the Dome and the Piazza del Campo where twice a year is run the famous Palio. In the late afternoon return back to the hotel. Dinner. Overnight. 

Day 3- Volterra, San Gimignano, Chianti 


The day is focused on the visit of historical medieval towns enriched by a lunch from a panoramic terrace overlooking the vineyards.
After breakfast meet with driver/guide and head towards the medieval town of Volterra located at the edge of the Chianti Region. The day includes a guided tour of the town and free time for shopping. The second stop of the day will be the town of San Grimignana with lunch at a traditional Tuscan restaurant with views of the vineyards. 
In the afternoon you will head to the nearby Wine Estate. Guided by the owner of the Estate you will visit the vineyards, the cellar and experience a rich Chianti Wine and food tasting. Transfer back to the hotel. Overnight. 


Day 4-  Bolgheri, Pisa , Departure  

Breakfast in Hotel. Check out. Transfer by minivan to the charming village of Bolgheri a picturesque village, world known for its local wine Sassicaia and for the Cypress road, a unique road with more than 2400 Cypresses on the road sides. Visit of the village ,wine tasting at a local wine producer followed by a lunch at in a traditional restaurant where you will try the specialties of the Tuscany's cuisine, including truffle, mushrooms, wild boar . . Pick up and transfer to Pisa – optional stop at the Miracle Square for a last photo under the Leaning Tower before reach the Airport of Pisa/Train Station. Time to say goodbye Tuscany!

In Salento every season has a peculiarity and this is one of the reasons why it's so suggestive;In the winter and autumn season there is the oil’s collection, in the summer you are surrounded a wonderful sea, during all the year you can visit the Baroque Art Cities.

The Masseria we are offering you  is an estate of 11 hectares of olive trees located in Castiglione 3km from the sea (Adriatic). It is a family owned hotel specifically (bed and breakfast), which is also dedicated to the production of biological oil. It's possible to have dinner on site, dinner since the owners managed a small restaurant where are cooked traditional handmade dishes with biological products.

The philosophy behind the experience offered below, is to return to the past, to live a different holiday in a peaceful and healthy environment. At the Masseria  you will find  an organic garden, organic produce oil and cooking classes with  typical products of the earth.


Itinerary


Day 1 - Brindisi

Arrival at the Airport (transfer) we will pick up you and take you to the farmhouse .Check in and show around the property. After a small break we make a tour of the farmhouse and an explanation of how do the oil (at that time may not see as is hara because the season is from October to January) visit to the mill where Emilio explain all the procedure (we use the traditional procedure) and oil tasting.Dinner at the farmhouse with typical food from Salento ,such as biological vegetables directly collected from the farmhouse. (also with the help of customers)


Day 2 - Castro, Santa Maria di Leuca

Breakfast, departure  tour of the Adriatic coast with stops at the Acquaviva marina, Marina serra before headint to visit of the historic center of Castro.Free time in Castro to eat something at one of the numerous local restaurants. In the afternoon tour to Santa Maria di Leuca with stop at Ciolo bridge ,the town is the eastest town of Italy, return to the farmhouse. Time at leisure.

Dinner based on fish dishes typically cooked in a traditional way.


Day 3 - Gallipoli, Lecce 

Breakfast. Excursion along the Ionian coast and visit of Gallipoli. Gallipoli is a coastal town in Apulia, southern Italy. The historic center, on an island off the mainland, shelters churches like St. Agatha’s Cathedral, with its ornate facade. Nearby, the Church of St. Mary of Purity has a maiolica tiled floor. Gallipoli Castle includes the Rivellino tower, standing apart from the main building. Across the bridge, on the mainland,lies a wonderful   Greek Fountain, dating from the Renaissance. 

Free time for try some local food  and return to the farm to rest. In the afternoon visit of Lecce, the pearl of the Baroque, with a professional guide and dinner in a typical Neapolitan pizzeria to try the real Italian pizza.


Day 4 - Alberobello, Ostuni 

Breakfast .Departure to the Valle d' Itria, and Visit of the charming town of Alberobello (with a professional guide)a unique town with traditional white houses called " Trulli". The city is   listed as Unesco World Heritage Site, for the uniqueness of the landscape, and of the historic buildings that once served as storage and housing for the local population. Free time for shopping.and Pick nick lunch. In the afternoon departure to Ostuni, a popular summer resort town, with a beautiful city center and called also the White City for the colour of its buildings. guided tour of the town. 

 Return to the farmhouse. Dinner


Day 5 - Maglie, Gastronomic Tour 

Breakfast. The whole day is dedicated to local gastronomy and  discovery of local products, to the processing and production of typical local dishes.Firsti stop is to Maglie and  at the most important agro-food artisan workshops in the area, including a pasta factory, a mozzarella cheese factory where to try the famous " Burrata " and a chocolate workshop. Free time at Maglie. In the afternoon wine tasting in a historic cellar in the area, return to the farm and Cooking class with chef Emilio, explication and preparation of typical "home made pasta salentina" and Italian fresh pasta). Dinner at the farmhouse with what you made during the class .Overnight


Day 6 - Otranto, Porto Badisco,Zinzulusa cave  

After Breakfast. We depart for a tour of the Adriatic coast with stop in Otranto, home to the 15th-century Aragonese Castle and 11th-century Otranto Cathedral, with a rose window and ornate mosaic flooring. At the harbor, Torre Matta tower enjoy sweeping sea views followed by a  visit of the city, free time to eat , short stops also at the bay of Orte,before hading towards the small fisherman's villages of  Porto Badisco and Porto Miggiano followed by a visit of the Zinzulusa Cave (prehistoric cave on the sea) return to the farmhouse and farewell dinner . Overnight.


Day 7 - Departure, Brindisi

Breakfast. Check out. Time to say goodbye to your new friends .Private transfer to the airport or Brindisi/Lecce train station . End of our services.

The afternoon will be dedicated to the cooking course, which will have as its object the preparation of dishes made according to the ancient recipes handed down by Martino, the historic chef of the Family. Day 3 : Faenza, Brisighella

Overview : 


Meeting point with the Sommelier in the center of Verona. Start of the walking itinerary that will wind through the lesser-known streets of the city passing through the Arena and then into the district that was once dedicated to the processing of wool. A stop is a must in front of the signs of the oldest shops that tell of the past and traditions.

We will reach a historic Osteria where we will make the first stop for a tasting of two glasses of local wine paired with typical cold cuts and cheeses. The tavern is a point of reference for anyone who wants to get away from the more touristy routes, savoring the taste of tradition.

The sommelier will explain and tell the characteristics of the wines, the territory of origin and the combinations with the local cuisine.

At the end, the route will take you to the ancient Roman forum until you reach one of the oldest places dedicated to wine and the unique flavors of this land.

It is in this place where the second stop will be made and there will be a tasting of the most renowned wine of Valpolicella: Amarone! The glass of Amarone will be paired with some cicchetti. In the Osteria you will be enveloped by a unique atmosphere and if you are lucky you will be able to meet the local elders who drink, joke and sing.

Inside the Osteria is "hidden" one of the oldest cellars where thousands of local and international bottles of wine are kept. You will be accompanied to visit this unique and suggestive cellar that will give the perception of being inside a bottle!

An authentic food and wine experience to discover the history and scents of the area.

Breakfast in the structure; Departure by private car, driver and wine expert guide to discover Valpolicella, a hilly area located north of Verona and a few kilometers from Lake Garda. We will immerse ourselves in the hilly scenery of the Valpolicella appellation, cradle of the renowned Amarone DOCG, an area rich in eno-gastronomic excellence and a strong cultural imprint.

Through a scenic route in the Classic and Historic area of ​​Valpolicella, you will stop in one of the most beautiful villages in Italy: San Giorgio Ingannapoltron, from where you can admire its parish church and a view that reaches as far as Lake Garda.

Guided tour of a historic family-run winery of Amarone Docg production, which for generations has expressed the history, traditions and scents of Valpolicella. Accompanied by the producer's passionate story, an immersive experience will begin in the vineyard to learn the life cycle of the vine. You will learn about the production techniques of Amarone, with its special drying, the way in which Valpolicella Ripasso is produced and then appreciate its different characteristics through a guided tasting of: Valpolicella Classico, Ripasso, Amarone, Recioto. Lunch at a typical Trattoria.

At the end we will reach the border area located between Valpolicella and the Lessinia Regional Park for a tasting of typical products. Guided tour of the maturing and tasting rooms at a historic salami and cheese company. You will be able to taste a selection of aged and aged cured meats and cheeses including the Ubriaco cheese aged with Amarone, paired with artisanal mustard jellies and jams.

An unforgettable tour of the wonderful Prosecco hills, a UNESCO World Heritage Site: an enchanting place where picturesque medieval towns and cities are combined with the excellent wine that is the symbol of the internationally known Italian aperitif: Prosecco Superiore Docg.

Breakfast.; Departure by private car, driver and wine expert guide towards Conegliano Valdobbiadene on the Prosecco hills. 

Through the green hills of Valdobbiadene in the land of Prosecco we will go to the discovery of the local grape called Glera. Guided tour of a historic winery to discover the entire winemaking process that will end with a rich tasting of the many varieties in which Prosecco is produced; Lunch at a typical trattoria, where you will enjoy not only excellent food but also a wonderful view of the Prosecco hills.

 In the afternoon the tour continues in the so-called Cartizze hill, where the most famous and exclusive “Conegliano Valdobbiadene Superiore di Cartizze DOCG” is produced. Stop at a historic winery overlooking the Cartizze hill for a guided tasting of the various expressions of Prosecco from the Extra Brut to the Dry version;

 At the end of the tasting, transfer to Asolo for a relaxing walk. Asolo is one of the most enchanting villages in Italy, characterized by narrow streets with its arcades, noble houses and taverns. A fascinating place on the gentle hills of Asolo, a destination for poets and writers, artists and travelers, who found inspiration here. DAY 2 - WINE TOUR, CULATELLO DI ZIBELLO ,CORTE PALLAVICINA 

Breakfast at the Relais and head on to visit one of the best wineries of the nearby province of Piacenza, which real connaisseurs will discover as one of the richest wine estate areas of Italy, with up to 18 PDO wines ranging from local to international varieties, to start with its still or sparkling elegant red Gutturnio. Tasting lunch at the end of the visit. On the way back to Parma, stop-by gt the charming fortified village with own fortress in Vigoleno: a walk within its high walls will let you live a romantique escape and the un mistakable atmosphere of the Italian Middle Ages…and don’t forget to try a sip of Vin Santo, a liqueur wine produced in minimal quantities only by the best vintages.

First of all, visit an authentic producer of Parmigiano-Reggiano PDO: you'll first see the hand making, then the salting process in the pools and finally the "wheel cathedrals", real walls mountains of cheese in a single room. Tasting at the end. Photo stop at the medieval Castle of Torrechiara dominated by its romantic castle: for sure the most spectacular amidst the Castles of the Duchy of Parma and Piacenza and Northern Italy, dating back to 1448 DC. After that visit one of the family-run Prosciutto di Parma factories producing the mythical Prosciutto di Parma. You will get to know why the best ham can only be made in the hills of Parma, where the Marino wind blows from the Ligurian Sea through the so-called Food Valley of Italy. Full lunch based on the typical products of the territory in a farm-to-table restaurant Parmigiano, Prosciutto aswell as other kind of local cold cuts, a typical filled pasta dish (tortelli di Parma), homemade cakes. Day 1 - Arrival in Apulia Region,Polignano a Mare 

Arriving in Apulia region. Private transfer from Bari Airport,  our guests will be welcomed in a typical Apulian Masseter, a charming place with an unique and sophisticated style. Our first stop will let you discover the home-town of Domenico Modugno, Polignano a Mare, well known for its cliffs overlooking the sea and for its charming old town.
A journey between an historical architecture, balconies dropping sheer to the blue and poems written on stone-walls, finishing with the well-known “chaff speciale “, an excellent invention made in Polignano : a ritual greeting made of coffee, sugar, lemon peel, cream and Amaretto of Saronno. We will then come back to our Masseria for our dinner and overnight stay.


Day 2 - Alberobello, lunch at EVO Restaurant, Wine Tour 

A breakfast in our Masseria with zero-km local products opens our day-2 of this tour. Our first destination is Alberobello, part of the UNESCO’s World Human Heritage thanks to its millenary history. Wandering through its Trulli, extraordinary examples of dry-stones dwellings, will give the opportunity to our guests to dive into the magical atmosphere of a unique town. Lunch-time: tradition, experimentation, study and attention to the details. In one word : EVO. Winner of “ 4 Ristoranti “ ( an Italian TV cooking show ), it’s the perfect place where you can taste the essence of the South of Italy : the raw materials of this territory, the restaurant kitchen garden
and apulian wines coming from small local producers make this restaurant an unquestionable yet unforgettable stop.
In the afternoon our guests will discover an historic apulian winery. A family history who started in 1882, surrounded by oak barrels and hectares of vineyards. With an oenologist, after visiting the vineyard, we will see the old barrels area, a charming underground cellar where you can discover the various phases of the vinification.
At the end of the visit we will taste 3 different wines : Primitivo, Negroamaro and Malvasia.


Day 3 - Cooking Class in Masseria,Dinner overlooking the Sea 

It’s time to get your hands in the dough, for real ! Our guests will reach a charming Rural Masseria surrounded by centuries-old olive trees
where, with a pastry board, an apron and a rolling pin they will challenge themselves to make orecchiette and cavatelli pasta, thanks to the expert hands of the Chef. This pasta, flavoured with traditional sauces, will be served to our guests as long as a variety of excellences from our territory. In the afternoon: free time in our resort.
OPTIONAL: our guests could book an equipped beach close to Monopoli / Capitolo . Our day ends in Monopoli, a maze of narrow alleys smelling of the sea, with votive shrines, fishing nets laying under the sun, flower-filled balconies and a blinding whiteness. Our dinner will take place in Lido Bianco restaurant: pottery from Grottaglie and large glass surfaces overlooking the sea welcome us in this microcosm of beauty where you could entirely live, breathe and taste the sea. The Bini family offers an all-embracing experience, supported since ages from Giovanni, who sorts the fish catch, and from Florinda, irreplaceable landlady always cared even in the smallest details


Day 4 - Matera city tour, Dinner in Polignano a mare 

 Breakfast in our Masseria and departure for Matera, discovering the town of the “ Sassi” on a “ Calessino “. European Capital of Culture in 2019 and part of the UNESCO’s Human World Heritage, Matera jealously guards its past hollowed out in the rock, made of natural caves once called home.
Fragrant, scented and genuine: it’s the bread from Matera, PGI symbol of the town. After a tasting in a well-known bakery our guests will reach the famous restaurant of the Starred chef Vitoantonio Lombardi in a cave of the “Sassi“ district where you can live an experience out oftime, exclusive and unforgettable.
Free time in the afternoon. Our day ends in Polignano a Mare with a dinner suspended between sky and sea. Nestled in one of the most evocative and attractive places in Polignano, Terrazza Monachile restaurant is an exclusive unconventional location where a good cooking and a fantastic panorama are perfectly blended.


Day 5 - Bari, street food and starred dinner in Putignano

Bari, the land of the street food. Our fifth day lead our guests discovering a city who is both elegant and popular : its soul is divided between the exquisite streets of the Murat district and the narrowed streets of the old town. The Petruzzelli Theatre, the Saint Nicolas Basilica and the Norman-Swabian castle are only some of the unmissable stops in “ Bari Vecchia “ before diving into the well-known “ orecchiette street “ and tasting “ sgagliozze, focaccia and panzerotti “, as long as very famous beer here for the “ Baresi “.
In the afternoon we will go back to our Masseria. In the evening our guests will reach Putignano for a dinner in the restaurant of Angelo Sabatelli, Michelin-starred Chef. Talented and brilliant, Sabatelli will welcome us with his technical cuisine which enhances our territory also with a great choice of Spumante wine and Champagne


Day 6 - Ceglie Messapica, Lecce dinner on a roof garden 

Breakfast in our Masseria and departure for Ceglie Messapica, town of art and land of gastronomy. After the visit of its wonderful old town, full of buildings of the 18th century, our guests will taste the well-known biscuit of Ceglie, an almond-paste pastry stuffed with cherry or grape jam. For their lunch our guests will reach one of the most famous restaurants of Ceglie, Cibus, located in an old convent of the 15th century. Its stone-walls rooms, with their white-washed arcades, houses the kingdom of Lillino Silibello, a kind and genuine person with a thorough knowledge of the cuisine and the enogastronomic traditions of his own territory. Cibus is not only a restaurant but also a place for knowledge : Lillino has always seen his work like this, considering the food not just a source of pleasure but also a key to understand the culture and the history of a place. In the afternoon we will reach Lecce with its wonderful baroque architecture made of local stone.
In the afternoon our guests will take time to discover the city and do some shopping before reaching the Roof Garden of The Risorgimento Hotel for our dinner. Day 7 - Otranto, tasting in Lecce, Dinner in a Medieval tower

Breakfast in our hotel and discover of Otranto, the eastern town in Italy. Our visit starts in its old town, paved with stone, part of UNESCO’s Culture of Peace Heritage, deeply immersing ourselves in the absolute beauty of the mosaic made by Pantaleone in the Cathedral, in the byzantine Saint Peter church and in the Aragonese castle. Back to Lecce, after a guided tour of the city, our guests will reach a well-known bakery in the city centre for a tasting of the “ pasticciotto leccese ”, a shortcrust pastry filled with cream baked in a hoven.
The dinner of our last evening is located in a medieval tower : Torre del Parco, built in 1419, is one of the most important and rare buildings of the late-medieval era in Lecce. The tour is a fully live experience of the neighbourhood to discover the life of Matera ancestors in the Sassi caves, the community spirit, the practical sense of traditions in the daily life.

The bread stamp carved in wood to signal the wood of the finger in the pie, infusions and herbal teas prepared starting from the same plants, ancestral knowledge which is today a unique know how to pass on to future generations.

A total immersion in the culture, in the traditions , discovering the territory of Matera, during which the traveller becomes an active part of the activities 

The accommodation :  All cave rooms were all inhabited by a family of Matera until 1950s then, in 2007, they were completely restored with special care respecting all the structural features of an hypogeum. They all have private terrace and bathroom; they are equipped with bath towels, hotel amenities, shower, hair-drier, air-conditioning/heating, TV, refrigerator, and internet connection.

Their position is really enviable and adjacent to the Musma “ Museum of contemporary sculpture”; moreover in a few minutes walking it is possible to reach the most interesting and important sites of Matera such as the Cathedral, or Vittorio Veneto square, rock churches and the typically furnished cave dwelling.

Day 1 : Arrival 

Arrival in Matera and private transfer from Matteotti Station to the hosting structure followed by a welcome drink. Here you will leave the unique experience to sleep in a proper cave rooms all inhabited by a family of Matera until 1950s then, in 2007, they were completely restored with special care respecting all the structural features of an hypogeum.

Day 2 : Matera, Sassi Area Tour 

After breakfast meeting with your local guide for a guided tour of the Sassi Area. The old town’s Sassi are formed by two districts slotted in adjoining pits, Sasso Barisano and Sasso Caveoso. In between stands the elegant cathedral, which looks out over the gorge. Rock-cut dwellings are scattered all around, often grouped around small squares called vicinato (‘neighbourhood’). These distinctive abodes are representative of the way of life for the city’s inhabitants until around the 1980s (by which point most inhabitants had been forcibly resettled or the dwellings modernised), some of which date back millennia. Scenic tour of the Hypogeum Acqueduct .

Day 3 : Matera, Park Murgia, Workshop, Wine tasting

The Pesto course: Levanto


In Levanto’s historical center, the “laboratory of the pesto” prepares the most ancient and well-known sauce in the world since 1976. In this laboratory you will have the chance to learn how to make the pesto sauce with your own hands following the tradition. After tasting a glass of sparkling wine accompanied with a local extra virgin olive oil on a bruschetta, you will taste the pesto sauce made with the modern method while assisting the demonstration and explanation of the pesto sauce made with the mortar.
Here comes the moment to make your own pesto sauce with the mortar: wash and dry the basil leaves, pounding them together with salt, pine nuts and garlic, add the Parmigiano cheese and the extra virgin olive oil. You will get a concentrated and perfumed pesto cream, which can be used on some pasta or on a bruschetta.

At the end you will enjoy your own made pesto sauce together with a glass of white wine and some typical
